BANANA BREAD, A STARBUCKS COPYCAT WITH A TWIST

Click the picture to read more >> Today it's quite cloudy over the west-north side of Helsinki, so I've decided to stay in and try baking an oldie! Lucky me I had all the ingredients and I am pretty sure you do it too! We woke up quite late around lunchtime and decided to start the day with a late brunch. So gathered all my ingredients together and got myself up to a challenge! Try to do a Banana Bread Starbucks copycat. I am not sure if you've ever tasted Starbuck's Banana Bread but it's often sweet and quite moist and compact.

Well I thought about it and wanted to give it a little twist! Since the only vegetable oil we have is Coconut Oil, I've decided to add very few sprinkles of coconut flakes inside the dough also a little bit more of the walnuts that the original Starbucks loaf used to have.

And these are the results!



As for the recipe, follow the instructions below.

Preheat oven to 170 Celsius degrees before starting with anything.

✔︎ 1/2 cups Stevia
✔︎ 1/2 cups of Coconut Oil
✔︎ 1 Egg
✔︎ 1 teaspoon Vanilla Extract
✔︎ 2 tablespoons Milk
✔︎ 3 ripped Bananas, peeled and mashed
✔︎ 1 teaspoon coconut flakes
✔︎ 2 cups of All Purpose Flour
✔︎ 1 teaspoon Baking Soda
✔︎ 1 pinch Salt
✔︎ 1/2 cups Walnuts, chopped (plus some extra for topping)


1. Mix Stevia with Coconut Oil, 1 egg, a little vanilla extract, milk, and ripped bananas (previously peeled and mashed) and coconut flakes. Combine these good.
2. Add to the previous combination: all purpose flour, baking soda, a pinch of salt (1/4 of a teaspoon) chopped walnuts. Mix everything together until well combined.
3. Add the formed dough to a loaf pan and sprinkle on top some chopped walnuts and press them slightly in the dough.
4. Bake for 35 minutes and try the loaf after 30 minutes or so by sticking in a toothpick.

Get the loaf out of the oven and let it sit for some minutes to cool off. Serve it at teatime, breakfast or with delicious vanilla sauce to add a little sweetness.
